Dutch Oven Fried Rice

One of my all time favorite dishes is Chinese Fried Rice. In fact I often take my wok with me when I'm camping.

Since most of you aren't crazy enough to pack a wok in your camping gear, I started thinking about how I could make a simple fried rice recipe in a Classic Dutch Oven.

As recipes go, I probably had more doubts about this one than any I had come up with before.  After a little experimentation I was surprised to find that you could make a very tasty and effortless fried rice this way.

I'm now confident you won't find a better version of this recipe anywhere

Ingredients

Directions

  1. Start about 18 charcoal briquets in a chimney starter.
  2. Beat the egg, and mix in 3 drops each of soy sauce and sesame oil.
  3. In a small hot skillet add a small amount of cooking oil.
  4. Add the egg mixture, turning once after it begins to puff up and cook until done.
  5. Cool and slice the egg into pieces about the same size as the pork.
  6. In a 10 inch dutch oven, mix the water, soy sauce, canola oil, and sesame oil.
  7. Add the remaining ingredients, and stir until blended.
  8. Place 6 coals under the dutch oven, with the remaining coals spread evenly across the lid.
  9. Allow to cook for at least 30 minutes, rotating the lid and oven ¼ turn in opposite directions halfway through.
  10. Remove from heat, stir and serve.
